Fix Version in OpenMP Tools

Summary

The value of version in dimension_reduction/UMAP/Shared-Memory-OpenMP/plugin.json and clustering/K-NN/Shared-Memory-OpenMP/plugin.json does not follow Semantic Versioning.
This also causes issues with the specified tags of containers: version cannot be updated until there exists a container with the correct tag (a tag with a version that follows SemVer)
