Issue with installing zlib from developer documentation

Following the instructions on the developer docs site (https://libcellml.org/documentation/v0.6.3/developer/setup), after installing zlib using the windows 64-bit installer (from https://github.com/OpenCMISS-Dependencies/zlib/releases), there's an issue with getting ZLIB_DIR to properly link with a valid directory. Whenever a path is chosen and Configure is re-run, the path gets reset.

I have just followed these instructions myself and was aware the were (a little) out of date. I hadn’t noticed this configuration dir getting reset issue. I think I know what is causing it and I will look into it. Thanks.
