S3 inventory for log bucket

@jjnesbitt Do you know if it would be possible to enable S3 inventory manifests for the S3 log bucket? Given it creates so many small files I think this could help improve some performance of my S3 log extraction tool from having to manually collect lists of assets from unprocessed days
