Is it possible to modify a source's spectral model from a Log-Parabola to a Power Law?

There are several methods to modify the model of a source (from LogParabola to a PowerLaw or the other way around) within your global model when using fermipy. The most straightforward approach is to use the following command: "gta.set_source_spectrum('Source_Name', spectrum_type='PowerLaw')". Alternatively, you can define the source spectrum in your configuration file to be overwritten in your global model, or you may manually modify the source spectrum in the global model file, although this is not the preferred method.
