Replace handlebars templates with EJS, coordinate extraction to memos in lodash-match-pattern

I'm thinking that EJS is lighter and more functional, and clearer syntax. Perhaps set up a more functional lodash-match-pattern to parse something like `<% foo.bar =%> to match and extract the result into a LMP memo or a universe variable.
