Cameras in Sim should also render videos like the realsense hardware cameras currently do. This is important to view experiments afterwards. In the best case the real camera and sim camera would share the storage thread code. As both have a ring buffer, it should be no problem to implement a safer thread that continuously reads out of the ring buffer and writes the frames into the mp4 file.
