Aims to address: "This is a scheduled macos-13 brownout. The macOS-13 based runner images are being deprecated." Following - issue actions/runner-images#13046 "[macOS] The macOS 13 Ventura based runner images will begin deprecation on September 22nd and will be fully unsupported by December 4th for GitHub and ADO" - pull request InsightSoftwareConsortium/ITK#5600 "COMP: Migrate macos runners from macos-13 to macos-15-intel"

We might still add macos-15-intel (following ITK pull request InsightSoftwareConsortium/ITK#5600), if Intel Mac binaries still appears necessary for some of our users. But for now, this commit appears to be the minimal change to keep MacOS on the elastix CI!
