Open class defaults to open so menu is visible. Yellow bg added for visibility, should be removed when real menu open animation is added. I read what what you wrote about the responsive text, when I look at the breakpoints, to me the overriding design rule is filling a certain amount of screen width, so I went with
vwunits. Can refactor if needed.
